Thailand, the land of elephants, green curry, stunning beaches, grand temples, royal palaces, and now, my official favourite types of food. From mangos with sticky rice to Chinese dim sum, the culinary options in Thailand are endless, and trust you me, I was not shy to literally taste everything I could get my hands on. From ultra luxury fine dining to super local street side food, today I am sharing the top places you have to eat in Thailand.
This quaint little spot in the heart of the capital of Thailand offers a nightly set menu which features literally all of Thai cuisine in a perfectly plated sequence of 9 (or was it 12?) courses. Spectacular service and the most delicious food, it was the perfect way to jump into all the culinary wonders of Thailand.

The Chinese influence in Thailand is prevalent, even down to the cuisine. In the central province of Trang, we went to a super local, no-frills corner restaurant (don't even remember the name of it) where we ate the most authentic iteration of Thai dim sum. It is definitely a recommendation to at least pop by and try it, and watch the rest of the locals enjoying both this, and also roasted sweet pork.
Imagine a trendy, cool, upscale but authentic Thai restaurant in Soho in New York City. This is how we felt walking into The Never Ending Summer, except we were actually in Bangkok. Owned by a famous Thai architect who has turned an old factory/industrial space into a beautiful cafe, shop, and restaurant, this was delicious traditional food, in perfectly sized portions.

Instead of needing to visit all the various regions of Thailand to eat at many of the local hotspots and floating markets and food vendors, the newly opened ICONSIAM in Bangkok brings literally everything directly to you, in the comfort of one (air-conditioned) setting. Its the perfect way to experience the 'authentic' experience of all the dining options without having to leave the mall!
Normally, if a remote hotel (reachable only by speedboat) has one dining option, the food and service can easily be subpar as the guests have no choice. This was definitely not the case at Andalay Beach Resort. This meal might have have been some of the absolute best Thai food we ate in Thailand. Fresh, flavourful, delicious!! The servers even helped us shoo away a lizard/gecko that had joined us under the table LOL

This fusion spot atop the gorgeous Baba Beach Club Phuket technically specializes in Japanese cuisine, and while we did order some Maki, their green papaya salad, chicken curry, and fresh young coconuts were absolutely incredible. My recommendation is to grab a sunset (6:00 pm) seating, so you can have the stunning view to match the incredible cuisine.
I always knew I loved Thai food but this trip to Thailand really solidified how badly I need it in my regular routine. The best part is that almost all of the different dishes that we ate had a 'purpose' - this one is for digestion, this one is for cool days, this one is for warm days. Loved how much intention is placed into the dishes, but also, obviously, how amazing they tasted!
